Orange and Poppyseed Muffins

I love the folk that I work with… ok, maybe love is a bit of a strong word… so lets re-phrase…. I like the folk that I work with…

Ever since I started bringing in some baking in our old office block last year (in order to save my waistline for any further growth)… they now remind me every once in a while that their tummy’s are rumbling for something out of my kitchen – to this, I grin and normally give them 2 options of what I could potentially bring in the following morning.

Yesterday, I knew that I had Buttermilk in the fridge – therefore I offered buttermilk scones and I also knew that I had some poppy-seed in the cupboard and a recipe for Grapefruit and poppy-seed cake… which I had planning on adapting into muffins…

The poll went around the office… and on twitter… and the votes were pretty evenly shared across the 2 options… so, the final decision lay with… ME 🙂

and this is what I made:

175g butter, softened

300g sugar

300g flour

3 large eggs

1 teaspoon vanilla extract

1 ½ baking powder

250ml cream

4 teaspoon poppy-seed

juice of one orange

  • beat together butter and sugar until pale and fluffy
  • orange and poppyseed mufin mix 2
  • Beat in the eggs, one at a time
  • orange and poppyseed muffin mix 1
  • followed by vanilla essence, flour, baking powder, cream, juice and poppy-seed

  • place into greased muffin cups/tray (I managed to get 16 medium/large muffins out of this mix)

  • Bake for 25-30min at 180C
