Orange Chocolate Chip Loaf

A few weeks (if not months ago), I was completely inspired by an instagram post that I saw of Finla Noronha (another Belgian based food blogger with the blog “My Kitchen Treasures” which isn’t active in the blogasphere anymore – but I do recommend following her on instagram for drool-worthy food images)…

I found the recipe via google using *self raising* in my search as I have run out of normal cake flour (seriously???) on a recipe website called Naïve Cook Cooks => recipe here , however I omitted the orange butter!

It was super easy to make but my only negative comment is that by day 3 it was a bit like a stale scone… but nothing that 10 seconds in the microwave couldn’t fix 🙂

Orange Chocolate Chip loaf

3/4 cup of milk
3/4 cup yoghurt
1/3 cup sugar
1/4 cup orange juice
2 eggs, slightly beaten
1 Tablespoon orange rind
3 cups self raising flour
1 cup mini chocolate chips

  • Mix together milk, yoghurt, sugar, eggs, orange juice & zest
  • Add flour & mix well
  • fold in chocolate chips
  • Pour into a greased loaf tin
  • Bake for 40-45min at 190C

Prosecco and Orange Cake

HIM and I attended a weekend retreat for couples in Leuven – and I offered to provide a little bit of sweet treat for the first evening…

I was told that 2 people were lactose intolerant… so off I went in search of recipe in my arsenal of sweet treat documents to find something that would appeal to all!

this is one of those recipes that has been in my handwritten recipe book for years – so I have no idea where I first found it… and it has the whole *angel* cake thing going for it!

super easy to make and super easy to eat 🙂

Prosecco and Orange Cake

150g Plain flour

6 eggs, separated

100g caster sugar

3 tablespoons Olive oil

150ml Prosecco

juice of 1 orange

zest of 2 oranges

2 teaspoons of vanilla extract

1 teaspoon baking powder

Prosecco and orange cake ingredients

  • Place egg yolks and sugar in a bowl and whisk until creamy
  • prosecco and orange cake eggs prosecco and orange cake beaten eggs
  • Beat in the olive oil, prosecco, orange zest, orange juice and vanilla extract
  • prosecco and orange wet mixture
  • In a separate bowl, whisk egg whites
  • Gently beat in flour to yolk wet mixture along with baking powder
  • prosecco and orange cake mixtures
  • Mix a spoonful of the egg whites into cake mix, then fold in the rest (gently)
  • prosecco and orange cake folding in prosecco and orange cake folding in 2
  • Pour into a greased cake tin
  • Prosecco and orange cake pre-oven
  • Bake for 25-30minutes at 180C
  • reduce heat to 150C and bake for a further 20minutes
  • Switch off oven, open door and leave to cool

Orange and Poppyseed Muffins

I love the folk that I work with… ok, maybe love is a bit of a strong word… so lets re-phrase…. I like the folk that I work with…

Ever since I started bringing in some baking in our old office block last year (in order to save my waistline for any further growth)… they now remind me every once in a while that their tummy’s are rumbling for something out of my kitchen – to this, I grin and normally give them 2 options of what I could potentially bring in the following morning.

Yesterday, I knew that I had Buttermilk in the fridge – therefore I offered buttermilk scones and I also knew that I had some poppy-seed in the cupboard and a recipe for Grapefruit and poppy-seed cake… which I had planning on adapting into muffins…

The poll went around the office… and on twitter… and the votes were pretty evenly shared across the 2 options… so, the final decision lay with… ME 🙂

and this is what I made:

175g butter, softened

300g sugar

300g flour

3 large eggs

1 teaspoon vanilla extract

1 ½ baking powder

250ml cream

4 teaspoon poppy-seed

juice of one orange

orange and poppyseed muffin ingredients

  • beat together butter and sugar until pale and fluffy
  • orange and poppyseed mufin mix 2
  • Beat in the eggs, one at a time
  • orange and poppyseed muffin mix 1
  • followed by vanilla essence, flour, baking powder, cream, juice and poppy-seed
  • orange and poppyseed muffin mix 2
  • orange and poppyseed muffin orange
  • orange and poppyseed muffin mix 3
  • place into greased muffin cups/tray (I managed to get 16 medium/large muffins out of this mix)
  • orange and poppyseed muffin oven
  • Bake for 25-30min at 180C
