Marshmallows

yes people… HOMEMADE MARSHMALLOWS…. can you believe it?

Mom has been making these for years and I love them… soft pillows of sweetness covered in desiccated coconut! And a batch is a perfect way to sort out Christmas gifts! A bag of these for your friends & family will stand you in good steed for the year ahead 🙂 and I have heard that Santa enjoys them too!!! (or at least this is my excuse for why pieces can easily go missing overnight :))

And sooooo easy to make… you just need a few ingredients, an electric mixer and of course… a handful of patience!

Marshmallows

3 cups of water
4 cups of sugar
3 heaped tablespoons of gelatin granules
1 teaspoon of vanilla essence
food colouring (if you want)
2 cups of desiccated coconut

  • Place sugar with 2 cups of water into a pot
  • Bring to the boil and then reduce heat to gently boil for 10-15minutes to make a syrup
  • Mix the gelatin granules with 1 cup of water in a large mixing bowl
  • Add the sugar syrup to the gelatin mixture
  • Using an electric mixer – start mixing at a low speed for 10minutes
  • When the mixture turns white and starts to thicken, increase the speed
  • Beat for 20 (or so) minutes until the mixture becomes thick & glossy (if you touch the mixture it should stick between 2 fingers)
  • Sprinkle desiccated coconut into a large baking tray
  • top with the marshmallow mixture and another layer of desiccated coconut
  • Leave to “set” overnight
  • You can then cut pieces and roll in more coconut

Makes about 60-80 squares
