Chocolate *Surprise* Muffins

Who doesn’t like surprises??? As long as they are not the surprises that you bring into your home on the soles of your shoes – that is! But rather the gooey extra chocolate hit surprise within a chocolate muffin!

Mommabear bought me this Moir’s Quick ‘n’ Easy Cakes & Muffins (biscuits, slices & more) cookbook for my birthday in 2000!!! And it has lovingly travelled from Port Elizabeth to Cape Town to Johannesburg, back to Cape Town and 5years ago, it travelled across continents to Brussels with me…

That is how much I love this cookbook!

The recipe is as promised – both quick & easy… and delivers on taste as well… I adapted the chocolate cherry muffins recipe by omitting the cherries and replacing with a ball of chocolate in each muffin casing (once half way filled of course)

Chocolate Surprise Muffins

1 and half cups flour
1/4 cup of cocoa powder
1 Tablespoon baking powder
1/2 cup sugar
2 eggs
100g butter
3/4 cup milk
chocolate balls/pieces

chocolate surprise muffins ingredients

  • Sift dry ingredients
  • Melt butter
  • Beat eggs and milk together
  • Pour butter & eggy milk into dry ingredients
  • chocolate surprise muffins bowls
  • mix to moisten
  • chocolate surprise muffins mix
  • fill muffin paper cups halfway
  • Add a chocolate ball (or piece) to each one
  • chocolate surprise muffins tray
  • top up with muffin batter (makes about 9 medium/big muffins)
  • Bake for 20min at 190C
