Upside down peach sponge

HIM and I had some unexpected houseguests previously… 2 strapping young Italian lads (one of which is a friend of HIM’s and has recently opened up his own restaurant in Italy).

What I love about a Felice (Happy) is that he loves my baking…. (see – mutual love and all that…:)..)

So when I knew that he (and a friend) were staying with us for a few days – I couldn’t help but whip up a cake for them to nibble on. (Inspired by the 94DR concept of making sure that there is something to go with the morning, afternoon or evening cup (or three) of espresso coffee!)

I also had another reason for baking this cake – and that was because I had a pile of VERY ripe peaches in the fruit bowl that were in dire need of either being made into jam or baked!!!!!!! So googlebox it was…. and I found this recipe on the BBC Good Food website (where else!). I adapted the recipe somewhat – as I used fresh peaches instead of their canned counterparts and I omitted the raspberries

This is one of the simplest recipes that you will EVER encounter – REALLY

Upside down Peach Sponge

250g butter, softened

280g self-raising flour

250g caster sugar

1/2 teaspoon baking powder

4 eggs

150ml yoghurt

3-4 ripe peaches

  • Peel and slice peaches and place on the bottom of a greased baking tin
  • peach upside down cake peaches
  • Beat butter, flour, sugar, baking powder, eggs and yoghurt in a large bowl with an electrict mixer
  • peach upside down cake batter
  • spoon over the peaches in the tin
  • peach upside down cake pre oven
  • Bake for 50min at 180C (160C Fan)
  • peach upside down cake post oven peach upside down cake final

  1. i’m definitely going to try this tonight. it’s my 13th wedding anniversary and we are going to have a special dinner at home and i’ll use your recipe to make dessert. the idea of plain yoghurt in upside down is quite intriguing.
