Double chocolate cheesecake

As per my previous post – I created a Double chocolate cheesecake for the Buttles UK Great Bake Challenge in Brussels.

This recipe was from the BBC Good Food Magazine (December 2008 issue) and I can say that if I hadn’t had such stiff competition – I reckon that I could have won!

But having said that – this is a wonderful cheesecake that deserves recognition in its own right and would be an amazing ending to any dinner party!!

Double Chocolate Cheesecake

14 chocolate digestive biscuits (I used the dark chocolate version)

85g melted butter

3x300g cream cheese (at room temperature)

200g sugar

4 Tablespoons cocoa

2 teaspoons vanilla essence

2 teaspoons of coffee liqueur

3 large eggs

284ml sourced cream

100g dark chocolate

2-3 tablespoons milk

  • Place the biscuits in a food processor and  pulse to make crumbs
  • Add the melted butter and mix
  • Press firmly into a greased springform tin to make a base

  • Bake for 10min at 180C
  • Remove from oven and turn up the heat to 220C
  • Beat cream cheese with sugar until smooth
  • Add the cocoa, vanilla essence, coffee liqueur, eggs, soured cream and half the melted chocolate – and mix well

  • Stir in enough milk to the remaining melted chocolate in order to make it a sauce
  • Pour cream cheese mixture into tin and bake for 10min at 220C

  • Turn down heat to 130C and bake for a further 30-40min
  • The filling should be set but stilly wobbly in the centre
  • Turn off oven and leave oven door slightly open to avoid the cheesecake cracking (still didn’t work for me this time)

  • Chill until ready to serve
  • To decorate, whip cream until it hold shape and swirl on top
  • Drizzle the remaining chocolate sauce and create a ripple effect with the end of a spoon
