White Chocolate Berry Cheesecake

Before I head off to Cape Town (this week) and HIM jets off to Portugal (also this week)  – we decided to host another little BBQ in our terrace garden courtyard.

We were so blessed to have a glorious summer day on Sunday (in terms of weather)… that we placed the couch outside under the umbrella, set up the BBQ area and enjoyed every last second of it!!

I had rummaged through my pile of recipe papers and found this one from the BBC Good Food magazine (issue June 2009) and I knew that it would be the perfect summer BBQ dessert! (And trust me – it was!! 2 of our friends are chefs in restaurants in Brussels and they both now want the recipe :))

White chocolate Berry Cheesecake

2x150g white chocolate

2x 300g cream cheese

284ml pot double cream

50g caster sugar

170g raspberries

5 teaspoons of strawberry jam

85g biscuits (I used marie but they recommend amaretti)

Other berries to decorate

  • Break chocolate and melt in a bowl over a pot of simmering water (do not let the water touch the bottom of the bowl)
  • Whisk cheese, cream and sugar together
  • Stir in melted chocolate until well combined
  • Stir most of the berries with jam
  • Line a loaf tin with greased cling film
  • Spoon in half the berries with jam mixture
  • Spoon half the cheese mixture into loaf tin
  • Spoon jammy raspberries down the centre

  • Top with the rest of the cheese mixture
  • level the top and press in the biscuits

  • Cover and chill for 6hr or overnight
  • To serve, carefully turn the tin onto a plate, lift off loaf tin and then gently peel off the cling film
  • Arrange remaining berries on the top
