HIM and I are not the only people in our group of friends who are moving house…
So when one of our friends asked if we would be interested in some items out of her fridge/freezer – I said yes (not really thinking it through 100% because I forgot to realize that my fridge would be full of HIM’s stuff as well)… but hey, what a friends for it they don’t take all your food off you 🙂
One of the items that was now firmly ensconced in my shoebox freezer was some blueberries – about 2cups worth in a ziplock bag.
Now knowing that my freezer is the size of a shoebox and was now home to a delicious array of Portuguese snack-ies that needed to be deep-fried…. I also knew that it was only a matter of time, before I actually needed to make space for “real” food – like chicken and meat, etc
I found this recipe on the Food.com website… as I typed in *banana and blueberry muffins*…
Banana and Blueberry muffins
3 large ripe banana’s, peeled and mashed
¾ cup of sugar
1 egg, lightly beaten
½ cup of butter, melted
1 cup of blueberries (if they are frozen, don’t de-frost them… just pop them into the batter frozen and all)
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
½ teaspoon salt
1 & ½ cup of flour
