Mary Berry’s Lemon Drizzle Traybake Cake

I have mentioned over and over again how addicted I was to the BBC tv show *The Great British Bake Off* (see post here and here)… so much so… that I actually bought their book online (thank goodness for Amazon.co.uk that delivers to Brussels!!)

Having said that… I think that Mary Berry is the Queen of Tarts and Bakes (I mean this in a good way!!), so when I stumbled across this recipe online (on Cakes, Bakes & Cookies blog) and AGAIN in the BBC Good Food Magazine (February 2011 issue), plus I had a pile of lemons at home… I knew that it was a *sign*!!

I didn’t make the lemon glaze topping as Per the blog… as I felt that the sugar crunchy topping was more than sufficient… plus this cake is light, fluffy and very more-ish!! (And of course – it makes a good sized portion and is probably the EASIEST cake you will ever make!!)

Lemon Drizzle Cake

225g softened butter

225g caster sugar

275g self raising flour

2 teaspoons baking powder

4 large eggs

4 Tablespoons milk

finely grated lemon rind

For the Sauce: 175g sugar mixed with juice of 2 lemons

  • Mix all ingredients together (except for the sauce)
  • Place in a greased baking tray
  • Bake for 35-40minutes at 160C (or until skewer comes out clean)
  • Pour the sugary lemon juice sauce over the cake when it is still mildly warm (not too hot!)
  • Cut into squares!

    Mary Berry really is the bees knees. She’s so lovely. I’ve just got her latest cook book’At Home’. It’s another winner- but it’s savoury and sweet and I have to say I still go to her baking bible before any other book on my ever expanding shelf.

  2. p.s. I actually laughed out loud when I read the name of your blog. I’ve put on so much weight since starting my blog. I actually feel unhappy if there isn’t a slice of homemade something when I get back from the school run. Thank goodness for my new found running obsession or I’d be huge!

    • i knew from the moment that i started my blog that my waistline was never going to be the same again… but at least i started out *not so skinny* and have just remained that way!
      My theory is that I am in shape… cos round IS a shape 🙂
