Apple and Bran Muffins

I found a similar type recipe in a Good Food Magazine (July 2009) but I decided to add Bran instead of wholemeal flour to give it more of a breakfast feel!

Apple and Bran Muffins

1 apple, peeled and chopped

2 teaspoons lemon juice

100g sugar

200g flour

85g bran

4 teaspoons baking powder

1 teaspoon ground mixed spice

50g chopped nuts

250ml milk

4 Tablespoons sunflower oil

1 egg, beaten

  • Put apple in a bowl and add 4 tablespoons of sugar and the lemon juice. Leave for 5minutes

  • Sift flour, baking powder, mixed spice and half a teaspoon of salt
  • Add bran, sugar and nuts, then make a well in the centre of the dry ingredients
  • Beat milk, eggs and oil together
  • Add apple mixture with wet mixture and pour into dry ingredients

  • mix lightly to make a lumpy batter
  • Spoon mixture into 12 greased muffin casings
  • Bake at 200C for 20-25minutes
