Flourless Cheese Bread

yes, yes… you read correctly… FLOURLESS cheese bread… and here I can actually hear your brains trying to work out how I have managed to bake a loaf of bread without flour…

Well, it is true… and it all started when many moons ago – I tried one of the many diets that have come (and gone) in my life. Essentially a high fat/protein and low carb diet (oh boy… who hasn’t tried one of these, right???). It mean meat and eggs for breakfast, salad/cheese for lunch and dinner was meat and veg … all of this needed to have vast quantities of fat in order for the weight loss to actually happen. However… should a drop of alcohol or a crumb of bread pass between your lips – you can kiss every single gram you have lost goodbye… And add 5 more kg’s….

Having said that … this is the one recipe that I feel in love with during the 3weeks of hell …. and it probably has enough calories/cheese to stop an elephants heart… BUT everything in moderation is fine… so don’t sweat it!

It can also be made into little muffins to be served alongside a bowl of healthy vegetable soup!! All you need to do is reduce the baking time!

Flourless Cheese Bread

100g ground almonds

100g parmesan

100g grated cheese (I used mature cheddar)

1 teaspoon baking powder


mixed herbs

4 eggs

4 Tablespoons olive oil

  1. Mix eggs and Olive oil together
  2. Add all other ingredients to a bowl and then add wet mixture
  3. Bake for 30-45minutes at 180C in a loaf tin
