Feeling nuts, Banana and Walnut Bread

I love banana’s – but I can never seem to finish a bunch before some of them start to get really ripe and the skins starts to discolour (and yes – I am one of THOSE people who likes to eat their banana’s a bit on the green side… still very firm and skin not entirely yellow yet…. so when they get yellow skinned with black spots… I am forced to bake with them… forced?? hmmm)

This will be my 4th baked/cake Banana recipe on the blog, the others (Chocolate and Banana cake, banana health muffins plus the banana loaf) have all proved to be popular with readers along with the banana/chocolate french toast. So here goes:

Banana and Walnut Bread

60g butter

105g caster sugar

1 egg, beaten

3 large bananas, mashed

280g self raising flour

3ml salt

75ml milk

30g chopped walnuts (but I used the whole 100g bag)

5ml vanilla essence

  1. Beat butter and sugar together until creamy
  2. Add egg and mashed bananas, beating thoroughly
  3. Sift Flour and salt together and add alternately with milk to creamed mixture
  4. Add walnuts and essence
  5. Pour into a greased loaf tin and bake at 180C for 1hour
