This is a perfect accompaniment to a good old-fashioned South African Braai (or in our case a Brussels terrace BBQ)! Wikipedia tells us that *braai* is the Afrikaans word for barbecue or grill and is considered a social custom in SA (um… pretty much a regular way of cooking in most households).
When confronted with a WHOLE weekend of >30degree’s in Brussels, we had to commandeer one of our friends terrace’s in order to fully enjoy the sunshine and whip out the Braai! M had just got back from 4weeks holiday in Canada, so we were really taking advantage… but HIM did the braai-ing, J brought the bread, while our very own Mr Drapper (aka My Madmen Mate) and I did the salads and organised the meats! We used paper plates… so the clean up for her was limited… but still… we were truly grateful!
I had a yearning to make a curried rice salad that I remember from my SA days… no idea who first made it, maybe my Granny or my Aunt… but this is exactly what I thought would be a great complimentary salad to the meat (Burgers, chicken kebabs and pork rashers)
Curried Peach Rice Salad
2 cups cooked rice
1 tin of peaches, drained and chopped
1 green pepper, chopped
2 sticks of celery, chopped
cup of Trim Mayonnaise/Salad dressing
Tablespoon of curry powder
- Mix the Trim mayonaise and curry powder and add a dash of milk to make the mixture a little runnier
- Mix peaches, rice, celery and green pepper
- Add the curried mayo
TA DA – served with other salads… and beautifully cooked meat straight off the Braai (in my case… a gorgeous hamburger… Mmmmm)
