Mushroom and Courgette Pasta

While looking for inspiration for dinner – I once again turn to one of my favourite online libraries of recipes… the BBC Good Food website and place the respective ingredients that are lurking in my fridge (Courgettes and mushrooms) into the search block, click *search* and wait…

Thankfully – they are already running a whole section on Courgettes (or Zuchinni’s) with a wide variety of options – from courgette cakes to layered up in lasagne to baked into breads… what they call a *perfectly versatile veg for summer recipes*.

And the best part is that I didn’t even have to scroll very far down the page in order to find something that tickled my fancy!  Original recipe link is here and was for a Courgette and Mushroom rice pie… And of course in true ME fashion… I adpated it a little 🙂 (in fact… not a little but a whole lot!). I didn’t want to have the additional carbs with the pastry (in order to make it a pie) and I decided that I wanted to cook pasta and make my life a little easier than standing and stirring Risotto rice for hours 🙂 and this is the result:

Mushroom & Courgette Pasta

2 teaspoons of olive oil

1 small onion

2 garlic cloves

675g mushrooms (sliced)

1 large courgettes (chopped)

100g dry pasta

250ml hot vegetable stock

2 Tablespoons Philly Cream Cheese

  1. Heat oil in a large pan and cook onion and garlic for 2-3minutess until softened
  2. Stir in Mushrooms and courgettes and cook over a high heat for 5-7minutes until soft
  3. Add the flour and stir to make a paste
  4. Pour in the stock and stir
  5. Turn down the heat and add the Philly cream cheese – stirring it in until sauce is creamy
  6. In the meantime, add the pasta to a pot of boiled, salted water and cook until done
  7. Serve with a good portion of parmesan
