Death by Chocolate Mousse Cake

In a moment of *blondeness* – I had this concept that this past weekend was Annabels final weekend in Brussels… but clearly my maths sucks… because we had had a huge conversation about 2weeks ago about the fact that she was staying for the first week of August and the implications of rent… so how in the world did I think her departure date was today???

Moving on… as I had had this loss of intelligence all weekend – I had planned Sundays lunch in her honor… and I know that she is a woman like me … who loves food.. especially anything chocolate related…

So this is my ultimate ULTIMATE Death by Chocolate Mousse cake… a tribute to a fellow food lover 🙂

Chocolate Mousse Cake

served with strawberries and cream

400g dark chocolate – melted

6 eggs

100g sugar

250ml thick cream

80ml coffee liquor

  1. Melt chocolate
  2. Beat eggs with sugar
  3. Add chocolate to egg mix gently
  4. Pour cream and coffee liquor in (do NOT beat)
  5. Pour into a tin within a waterbath (hot water half way up the tin)
  6. Bake for 50min covered with foil for 180C until set and firm but moist
  7. Cool
  8. Cover and refridgerate
