Midweek Ease….Cauliflower and Potato Curry

While at the market on Wednesday – I managed to pick up a beautiful head of cauliflower… and spent most today debating on what to make with it… my first thought was to make a Cauliflower and blue cheese soup… but it is the end of Spring and the start of Summer and I am not sure that Soup is really what I fancy right now…

Armed with my trusty google search option… I found a cheap and cheerful one pan recipe that appeals to my mid-week laziness! Within half an hour – I was seated with a steaming bowl of happiness!

Cauliflower & Potato Curry

2 Tablespoons oil

1 large onion (chopped)

3 garlic cloves (Peeled and crushed)

1/2 teaspoon turmeric

1 teaspoon ground cumin

1 teaspoon curry powder

375ml passatta (half a bottle)

1/2 teaspoon sugar

1 cauliflower (cut into florets)

2 Potatoes (cut into chunks)

1 small green chilli (halved lengthways)

Squeeze lemon juice

Handful of coriander (roughly chopped)

  1. Heat oil in a saucepan and cook onion for 10minutes until soft
  2. Add garlic, turmeric, cumin and curry powder and cook for a further minute
  3. Stir in passatta and sugar
  4. Add cauliflower, potatoes and split chilli and season to taste
  5. Cover with a lid and gently cook for 30minutes, stirring occasionally, until vegetables are tender
  6. When cooked, remove chilli and stir in the squeeze of lemon juice and coriander
