Overnight Health Muffins….

My mom has had this recipe for ages… and the best thing about the recipe is that it keeps in the fridge for 14days… and you can bake 1 or 2 muffins every morning  without having to make an entire batch (and then feel compelled to eat the entire amount :))

i love mine with a bit of cheddar cheese!!

The secret to these muffins is the fact that you make the mixture the night before … so that the baking soda has time to react with the rest of the ingredients giving it that wonderful soft and fluffy texture when it bakes!

Health Muffins

325ml brown sugar

2 eggs

125ml oil

2 cups digestive bran (something that I struggle to find in Brussels but always manage to get on a trip to London)

2 and half cups of flour

2 cups of milk

2 and half teaspoons bicarbonate of soda

2ml salt

5ml vanilla salt

125g raisins (or mixed fruit or dates)

  1. Beat together eggs and sugar
  2. Add oil and beat well
  3. Add remaining ingredients and mix
  4. place in a container and refrigerate for a minimum of 24hr
  5. Bake at 180C for 10-15min
