This is a reminder of the days when nothing was ever wasted and left-overs got a new lease on life!
My Gran, who now lives in Durban (South Africa) with my Aunt, Uncle and their gorgeous little poppets – but used to live in a little town called Port Alfred in the Eastern Cape used to make these and they are what dreams are made of.
Wondering what to do with your leftover pumpkin???
Fear not, Gran has the perfect recipe to make pumpkin fritters… super easy, tasty and can either be served as a savoury or as a sweet (topped with sugar & cinnamon).
Pumpkin Fritters

left-over cooked pumpkin (I roasted mine) – mashed
cup of flour
1teaspoon of baking powder
1 egg
oil (to fry in)
- Mash the left-over pumpkin, although it doesnt need to be entirely smooth
- Add the egg, flour and baking powder and mix together to get a cake-like batter consistency (add flour or water if too wet or dry)

- Fry spoonfuls of the batter in hot oil until golden and crispy

Looks great – might need to improve on the spices though! ha ha
